Varutharacha Chicken Curry Recipe

Ingredients for preparing Varutharacha Chicken Curry

  • Chicken: cleaned and cut into small pieces  -  ½ kg
  • Shallots  –  ½  cup
  • Grated Coconut  –  ½  cup
  • Sliced coconut  –     2 tbsp
  • Tomato  –  1 no.
  • Ginger-garlic paste  –  2 tsp
  • Green Chillies   -  3 nos.
  • Chilli Powder   –    1 tsp
  • Turmeric Powder  –  ½  tsp
  • Coriander powder  –   2 tsp
  • Fennel seeds   –   ½  tsp
  • Cinnamon  -  1 piece
  • Cloves    –   4 nos.
  • Pepper  -   ½  tsp
  • Cardamom seeds  –  2 nos.
  • Curry leaves  – 2 stalks
  • Oil  -  2 tbsp
  • Salt to taste  -  ½  tsp

Steps for preparing Varutharacha Chicken Curry

  1. Heat oil in a pan, roast grated coconut, curry leaves, a few shallots till brown in colour and fragrant. When it is cooled down grind it into a fine powder and set aside.
  2. Dry roast the cinnamon, cloves, cardamom, fennel seeds and pepper with chilli powder and coriander powder in to a fine powder. Marinate it with the roasted spice powder and a little water,  Keep it aside for an hour.
  3. In a skillet heat oil and saute the chopped shallots and coconut slices till golden brown. Add green chillies, ginger- garlic paste, salt, chopped tomato and turmeric powder. Saute well.
  4. Then into this mixture add the marinated chicken and stirto combine, add required water for the gravy and cook it on low flame.  When the  gravy is thicken and chicken is ready, add roasted coconut powder  and allow it to cook for a few minutes.
  5.  Remove from the fire and serve with rice or chapati.
