Chicken VindalooIngredients for preparing Chicken Vindaloo

  • Chicken  -  ½  kg
  • Cumin Seeds  -  ½  tsp
  • mustard seeds  –  ½  tsp
  • Fenugreek Seeds  -  ½  tsp
  • Coriander Seeds  -  ½  tsp
  • Onion: chopped  -  1 cup
  • Ginger- Garlic paste  -  1 ½  tsp
  • Tamarind Juice  -  3 tsp
  • Chili Powder  -  1 tsp
  • Turmeric Powder  -  ½  tsp
  • Coriander Leaves: chopped  -  2 tbsp
  • Oil  -  4 tbsp
  • Salt to taste  -  ½  tsp

Steps for preparing Chicken Vindaloo

  1. Roast the fenugreek seeds, mustard seeds, coriander seeds and cumin seeds in a pan and then grind into fine powder. This is the masala for chicken vindaloo.
  2. Marinate the chicken with salt and turmeric powder. Shallow fry the marinated chicken till golden brown. Keep it aside.
  3. Heat oil in pan, add chopped onion, ginger- garlic paste. Saute till they become soft. Then add red chilli powder, salt and vindaloo masala. Stir to combine.
  4. Once the masala is fragrant and brown, add marinated chicken along with tamarind juice. Cook till chicken is tender and gravy is thickened.
  5. Finally garnish with chopped coriander leaves and  serve hot.
