Ingredients for preparing Chicken Stew

  • Chicken: cut into pieces  – 1 cup
  • Carrots: cubed  -  1 no.
  • Potato: cubed  -  1 no.
  • Green Peas  -  ¼ cup
  • Coconut Milk (first extract)  – 1 cup)
  • Coconut Milk (second extract)   –  2 cups
  • Pepper Powder  –  1 teaspoon
  • Mustard seeds  –  ½  tsp
  • Garam Masala Powder  – ½  tsp
  • Small Onion  – 4 nos.
  • Green Chillies  -  3 nos.
  • Curry Leaves  – 2 stalks
  • Oil  –  1  tbsp
  • Salt to taste  -  ½ tsp

Steps for preparing Chicken Stew

  1.   Marinate the chicken pieces with pepper powder and salt and keep it for some time.   Cook it till the chicken is half done.
  2.  Add the three varieties of vegetables and allow it to cook by adding one cup of water.
  3.  Add the second extract of coconut milk and mix well. Let boil for 2 to 3 minutes.
  4. Then add the first extract of coconut milk. Bring to boil, sprinkle garam masala, stir well and switch off heat.
  5. Meanwhile heat oil in another pan, add mustard seeds. When they splutter, add the curry leaves followed by chopped small onion and green chillies. Saute till they turn golden brown colour.
  6. Remove from the heat and pour over the prepared stew. Serve hot with Appam or Bread.
